Who doesn't love a baked potato, creamy mashed potatoes or a cheesy potato gratin? But even potato lovers know that potatoes can pack on a load of calories even without the
fat-laden toppings that potatoes seem to require.

Potatoes are a starch, which becomes converted into sugar in the digestive process. Cauliflower has about 1/6th the calories of potatoes, and in this recipe, it requires no additional butter or sour cream.

What you need:

1/2 large cauliflower
1 whole garlic
olive oil
white pepper
salt-free seasoning

To roast garlic:

Trim the top off a whole garlic head. Drizzle with a little olive oil, wrap in foil and bake for about 30 min. in a 350 degree oven.

To prepare cauliflower:

Break apart florets of half a large cauliflower, place in steamer with 1/2 cup water, cover and steam for 6-8 minutes until tender but not mushy.

To process:

Drain cauliflower and place in food processor. Squeeze out roasted garlic from individual cloves. Puree together until smooth and creamy.Season with white pepper and a salt-free seasoning, if desired.

Full of essential vitamins and minerals, pureed cauliflower provides excellent nutrition. It looks like mashed potatoes, tastes like mashed potatoes, but won't pack on the pounds like potatoes. What could be better?
